Madras Cheddar Shortbread

Ingredients:
1 cup all-purpose flour
5 tablespoons unsalted butter, chopped
4 oz. Cheddar cheese, grated
1/2 teaspoon salt
2 teaspoons curry powder
Sesame seeds

Directions:

  1. Put all he ingredients into a food processor or blender and pulse until the mixture resembles bread crumbs. Add 1 tablespoon of cold water, if needed to bring the ingredients together.
  2. Put the dough into a bowl and work a little until it forms a ball.
  3. Tip the dough out onto a floured surface. Roll the dough into a sausage about 1 1/2″ diameter and roll in sesame seeds.
  4. Wrap in plastic wrap and chill for at least an hour.
  5. Preheat the oven to 350 degrees F.
  6. Slice the dough into 1/4″ thick rounds and transfer to a baking sheet lined with a Silpat baking mat or parchment. Bake in the preheated oven for 12-14 minutes, until golden and the edges are brown. Let cool on a wire rack, then store in an airtight container or freeze for up to 2 weeks.
