For a slightly heartier variation on this appetizer, stir Tuscan White Bean Appetizer by Radici of Tuscany into the tomatoes before topping the bread.
2 Roma tomatoes, halved, or seeded and chopped
2 tablespoons Trampetti Extra Virgin Olive Oil or Poggi Bonsi Extra Virgin Olive Oil by Trampetti
1 teaspoon Ritrovo Lambrusco vinegar
Sea salt and freshly ground black pepper
- In a small bowl combine the tomatoes, olive oil and vinegar and toss to mix. Season to taste with salt and pepper.
- Set aside at room temperature to macerate for about 30 minutes.
- Serve atop toasted bread.
