Olive Oil Poached Beef with Greens and Aged Balsamic

Serves 4

Ingredients:
½ lb. top sirloin beef, finely sliced in large, flat filets
½ cup Trampetti Extra Virgin Olive Oil or Poggi Bonsi Extra Virgin Olive Oil by Trampetti
1 teaspoons Ritrovo Selections Aged Balsamic Vinegar
1 cup fresh salad greens
1 teaspoon sea salt

Directions:

  1. Place olive oil in the bottom of a heavy, wide sauté pan. Heat over low-medium heat until warm.
  2. Set beef in a single layer in the olive oil. Allow bottom side of meat to brown for 1-2 minutes.
  3. Drizzle with Ritrovo Aged Balsamic. Flip meat over and allow to cook until just cooked through. (just a few minutes on each side).
  4. Turn off heat and allow meat to rest for about a minute.

To serve, chop salad greens finely and sprinkle over half of each meat slice. Sprinkle with salt, pan juices, and more oil and balsamic if desired.  Serve immediately.
