pasta salad

Mediterranean Picnic Pasta Salad
Serves 6-8

 

 

INGREDIENTS FOR THE SALAD:
1 lb. short pasta such as Marella Fusilli or Cavatelli
1 jar Ritrovo Selections Taggiasca Olives
1 jar capers
1 cup fresh Mozzarella, cubed
1 cup cherry tomatoes, sliced in half
¼ cup shredded basil

INGREDIENTS FOR THE DRESSING:
1 cup Poggi Bonsi or Casina Rossa Extra-Virgin Olive Oil
1/3 cup Ritrovo Selections White Balsamic Vinegar, or Organic Citrus Balsamic
1 tbsp. Casina Rossa Herbs & Salt
1 tsp. red pepper flakes

DIRECTIONS:
1. Cook the pasta as directed, drain and transfer to a large bowl.
2. Add the olives, capers, Mozzarella, cherry tomatoes and basil.
3. Mix dressing ingredients.
4. Toss salad with enough dressing to moisten, but not saturate.
