Winter Pear, Gorgonzola & Walnut Salad with Vineque Blackberry Balsamic

Pear,Gorgonzola & Walnut Salad
with Apple Balsamic Dressing |

This elegant salad is as lovely as it is tasty. The sweetness of the Blackberry Balsamic with the pear in contrast with the tanginess of the Gorgonzola will make your taste buds tingle with delight!
For the Salad: 4 cups mixed salad greens greens
2 ripe pears, Bosc or whatever is your favorite, thinly sliced
1/2 cup toasted walnut pieces
3/4 cup Gorgonzola (piccante recommended), crumbled For the Dressing:
1/2 cup Extra Virgin Olive Oil Toast Walnuts: Preheat oven to 350°. Pour about a cup of boiling water over the walnut pieces and let stand for 15 minutes (this process removes the bitterness from the nut skins and leaves the wonderful nutty flavor). Drain the nuts and pat dry with paper towel. Arrange the walnut pieces on a cookie sheet and bake for 20-25 minutes until lightly toasted, stir frequently. Note: you can make more than this recipe calls for and freeze them for future use.
Whisk together the Extra Virgin Olive Oil and the Acetoria Blackberry Balsamic Vinegar. Add salt and to taste. Mix the salad greens with about two tablespoons of the dressing.
Place the greens on six chilled salad plates. Arrange pear slices on top, sprinkle with walnut pieces and crumbled Gorgonzola. Drizzle a little more dressing over the salads and finish with freshly ground black pepper.
Serve it in one of our beautiful Toscana bowls for a presentation your guests will never forget.
